• Ingredients:
14 oz zucchini (400 g)
Extra virgin olive oil (as needed)
Salt (as needed)
Pepper (as needed)
Aromatic herbs (to taste)
2/3 cup tomato sauce (150 g)
1 cup ricotta cheese (250 g)
2/3 cup grated cheese (80 g)
1/2 cup drained mozzarella (125 g)
• Instructions:
Trim and slice the zucchini lengthwise. Place them on a baking sheet brushed with a little olive oil and brush the zucchini slices with oil as well. Season with a pinch of salt and bake at 200°C (392°F) for 12-15 minutes.
Meanwhile, mix the ricotta with the grated cheese and a bit of olive oil, salt, and pepper. Place a dollop of the mixture on one end of each zucchini slice and roll it up to form little rolls.
Spread 2/3 of the tomato sauce on the bottom of a baking dish, and arrange the zucchini rolls side by side on top. Finish with the remaining sauce, crumbled mozzarella, salt, pepper, olive oil, and herbs to taste. Bake in the oven for another 20 minutes.
