An international student from Spain served this when I was in college. I've made it any number of times (using yellow onions and olive oil). Of course, being American, I decided to add grated cheese as a topping after I flipped the omelet to cook the other side. When the cheese has melted, the omelet is done!

As an American of Spanish heritage, my soul ripped in half when she added that sunflower oil. Always use olive oil and drain the potatoes and onions after you fry them, add it to the beaten eggs, then go back and fry the whole thing together in the same pan At medium low heat. .

Примерно так же готовили это блюдо в моей семье в 70-х годах прошлого столетия!:)Жарили картофель с луком и вбивали сырые яйца, прямо в жарящийся картофель, не взбивая! Было очень вкусно, особенно с солёными помидорами из бочки:)

Our Spanish exchange student made this for us back in 1987. All these later I still make it, exactly as you showed. We love it and often have it as a Sunday night dinner. We couldn't remember the name and always call it Pilar's egg and potatoes. We are from Iowa in the United States.

This is how I make omelett too, though I usually use the yellow onion. It's called farmer's omelett and its origins is probably French or Spanish. It can be elaborated by adding sliced tomato, sardines/macarell/tuna, olives, chopped peppers, capris or whatever you like as topping, but the basic always remains eggs, onions and potato. Oh, and I usually fry the diced potatoes first, to get them crispy. I'm from Sweden and I have made this recipe for 40 years.

Red onion is not used in Tortilla de Patatas - it should be the regular yellow kind. Also, the potatoes should not be browned, just cooked through. This omelette needs at least two more eggs, and should not be so dry, brown and thin. Greetings from Sevilla.

The potatoes seems to be raw, they needs a lot of time to be soft.

The beauty of this classic is simplicity. French and Spanish cooks know this. Adding multi ingredients actually counters the basic ingredients and enjoyment, so go easy.
Experiment if you must, with small amounts of chorizo, OR bacon, OR sardines, OR olives, OR tomatoes. An exception being fresh basil, tarragon, or parsley, just a herb 🌿.

En España freímos la cebolla junto con las patatas con bastante aceite de oliva, cuando están cocidas y tiernas se retira el aceite sobrante, se vierte todo en el recipiente donde hemos batido los huevos y mezclamos bien la cebolla, las patatas y los huevos, hasta conseguir una mezcla homogénea, después vertemos en la sartén que estará a fuego medio/bajo y de esta forma quedará la tortilla muy jugosa. No le ponemos pimienta, sólo sal. Esa sería la tradicional. Aunque cada cual la puede adaptar a sus gustos, como es lógico.

Ооо, а я и не знала, что это испанский омлет!!
Бывает вечером нажарю много картошки, а не все поели, кто из-за фигуры, кто-то уже съел мороженое, утром заливаю яйцами и 3 мин завтрак готов😂

We had a bar in Spain, and my wife made the best Tortilla in the area!! People would travel miles for her Tortilla - still makes a really good one here in the U.K. too . . .
