Koliva

Koliva falls into the realm of ritual food. It is typically served during memorial services in the Eastern Orthodox tradition. You'll find this dish in Greek, Romanian, Serbian, and Bulgarian cuisine. The dish is like a landscape: the powdered sugar is snow; the soil is the wheat berries, sesame seeds, and walnuts; and the pomegranates are the seeds of trees and plants that will sprout in the spring. It is a dish of remembering, but also a dish of future prosperity.

Koliva
2 cups dried wheat berries
Cinnamon sticks
1 cup chopped walnuts, toasted
1 cup fresh pomegranate seeds
1/2 cup roasted sesame seeds
1/2 cup raisins
1/3 cup shelled unsalted pistachios or almonds
1 tablespoon finely grated orange zest
1/2 teaspoon salt
powdered sugar

OMG! You´re adorable! …besides you´re cooking one of my favourite desserts. We do it a bit different in Romania, but it tastes really good! 🤤😍😜
