Written recipe for Chicken malai tikka

Prep time: 1.5 hours
Cooking time: 30 mins
Serves: 4

Ingredients:
• Chicken 500 gm
• Salt to taste
• Black pepper 1/4th tsp
• Garlic paste 1 tbsp
• Ginger paste ½ tbsp
• Hung curd 3/4th cup
• Fresh cream ½ cup
• Almond paste 2 tbsp
• Green chilli paste 1 tsp
• Garam masala 2 tsp
• Kasuri methi 1 tsp
• White pepper powder 1/4th tsp
• Salt to taste
• Fresh coriander leaves 1 tbsp (chopped)
• Corn starch 1 tbsp
• Live charcoal + oil
• Bamboo skewers as required
• Ghee 2 tbsp
Methods:
• Slice the chicken breast from between and further slice the chicken into thin slices, transfer it to a mixing bowl, add salt & pepper, ginger paste and garlic paste, mix and marinate the chicken for 15 minutes.
• In a separate bowl, add hung curd, fresh cream, almond paste, green chilli paste, garam masala, kasuri methi, white pepper powder, salt and fresh coriander, mix well, add corn starch and add the marinated chicken, mix and coat the second marination properly, marinate the chicken for at least 1 hour.
• Place a bowl in the centre and Place a live charcoal in it and add few drops of oil, cover and smoke for 3-4 minutes. Discard the coal.
• Skew the marinated chicken in the bamboo skewers.
• Heat a pan on medium heat, add ghee and grill the chicken from all the sides for 3-4 minutes.
• Your chicken malai tikka is ready to be served, sprinkle some chaat masala and squeeze some fresh lemon to elevate the taste, serve hot.

Top class restaurant food at home! I just made this last night for dinner ! The moment I opened the lid of the 3 min process of the coal and oil, my house was full of aromas just like the ones at the restaurant! I already knew how well this is going to turn out to be.Thank you so much for such a lip smacking recipe. I baked them in the oven with butter and other vegetables . When I took a bite the chicken was so tender and was melting in my mouth ! Amazing amazing recipe! Lots of love from Texas !

I tried this today. It turned out yumm. Thanks for this recipe. It turned out just like restaurant. I had had this once at a dhaba and what i made today tasted exactly like it. The charcoal gave it that authentic flavour.

A few changes i made as per availability
- i used 1 cup hung curd and 1/4th cup milk instead of cream.
- Red chilli paste instead of green chilli
- Corn flour instead of corn starch.
- pepper jeera powder instead of pepper powder and a little extra than mentioned in the recipe.
- i used charcoal and butter as mentioned in the recipe, but if you dont have charcoal available use coconut shell in place of charcoal.

OMG! Made this today and turned out way better than restaurant! I can't thank you enough chef! I had to skip almond paste only as I didn't have it handy. Nonetheless it tasted simply mind-blowing!!!

We have made this kababs multiple times now, so juicy and delicious!!

@YourFoodLab Chef Sanjyot, You usually recommend in your other recipes that chicken should be left overnight only with the first marination, which includes ginger and garlic paste. However, when curd is added, it tends to release water, which can loosen up the marination. In this recipe, you are suggesting that it be left overnight in curd marination. I’d love to hear your thoughts!
