Thank you so much, Melissa! This has been so helpful for me. I have been plant based for 6.5 years and trying to do the fancy recipes every night and being totally stressed out most evenings. It’s so nice getting back to basics. And, the scale is moving! 🥰

I'm so surprised (happily) that I made it to the end! Not perfectly, of course. But I've shifted my habits in a big way and am working to continue to improve. I estimate that I ate according to the guidelines about 70% compliant and I have lost a little over 5 pounds and (more importantly) fit my clothes better and FEEL much better. I convinced my husband to join in, though he was eating more loosely than I did and he still lost about 4 pounds. I'm sure I would be down more if I had followed the guidelines more closely, but I'm moving in the right direction finally! Thank you for making this challenge approachable and not intimidating. I just ate a yummy lunch of lentil marinara pasta and a chopped vegetable salad dressed with lemon juice. Eating simple whole foods really is easy! I feel more energized, more happy, and more capable to make healthy choices now. :)

Melissa, thank you so much for sharing 30 days of your busy life with us on this weight loss challenge. I am so proud of sticking to it to the dot and so happy I lost 5 lbs in the process. Kabocha squashes, sweet potatoes and chestnuts are my seasonal carbs that I alternate and eat every day. Mushrooms too and there's a great variety available, I love chanterelles and the thin enoki mushrooms, which are like spaghetti and taste amazing in a homemade tomato, onion, garlic and basil sauce.
