[RECIPE BELOW] Yogurt Buns/Rolls

The one thing we struggle to recreate; bread. Don't get me wrong, there are a fair few keto bread recipes out there I enjoy and I tolerate all of them. But once in a while a keto bread comes along that blows your mind... These are just that; they're fluffy, they aren't fathead, they aren't full of eggs, there's no yeast used - these are a go-to for me now.
Yes, they are a bit of a faff preparation wise but trust me they are worth it.

| The Recipe |

INGREDIENTS:
- 2 cups (200g) Almond Flour
- 2 tbsp Protein Powder, unflavoured
- 2 tsp Baking Powder
- 2 tsp Xanthan Gum
- 1 tsp Salt
- 2/3 cup (150g) Greek Yogurt (CHECK CARBS BEFORE BUYING)
- 4 Eggs
- 4 tbsp Oil (Avocado, Olive or Coconut)
- 2 tbsp Water
- 1/4 cup (32g) Coconut Flour

METHOD:
1. Preheat the oven to 150c/300f.
2. In a medium bowl, mix together almond flour, protein powder, baking powder, xanthan gum and salt. Set aside.
3. In a small bowl, mix together yogurt, oil and water. Set aside.
4. Separate eggs, placing the egg whites in a large bowl and the yolks in a small bowl. Whisk the egg whites until stiff peaks form and give the egg yolks a short whisk too. Set the egg whites aside.
5. Add the yolks and yogurt mixture to the dry mixture - I tend to do this half at a time but you can do it all at once if you choose to. Mix well to ensure all ingredients are combined.
6. Add the stiff egg whites to the mixture and fold gently into your dough until everything is combined.
7. In a shallow bowl or plate, add coconut flour.
(WET YOUR HANDS, THIS IS SUPER IMPORTANT AS THE MIXTURE CAN BE STICKY).
Roll you dough into 10 balls (or 20 for smaller buns), rolling each in the coconut flour before you add them to a prepared baking sheet (parchment/greaseproof or a silicone mat).
8. Bake in the oven for 35-40 minutes. 35 mins for smaller buns and 40 mins for larger buns.
9. Remove from the oven and enjoy hot or cold!

Is the coconut flour dusting necessary? That stuff kills my digestive system. The buns look lovely and perfect for sandwiches, etc.
