Delicious Vegan Ceviche (Heart of Palm) Easy recipe!

Makes 6-8 Tostadas

½ Purple or white onion
2 Tomatoes
½ C. Cilantro
½ Cucumber
3-4 Limes
½ Jalapeno
1 Jar Heart of Palm
6 Tostada shells
Salt & Pepper to taste

Directions

1. Wash produce
2. Chop heart of palm, tomato and cucumber into medium dice or bite sized pieces. I like my cucumber peeled, this is optional. Chop onion into a small dice. Chop jalapeno into small pieces, If you like you can add a whole jalapeno to up the spice! Chop cilantro finely and combine all into a bowl.
3. Cut 3-4 limes and squeeze over top of the ceviche, I like my with alot of lime so the amount of lime is optional. Season with salt and pepper to your liking, chill in the refrigerator for at least 30 mins.
4. Serve ontop a crispy tostada and enjoy!
5. Some optional ingredients are avocados, olive oil and olives
