Any 6-8" Boning or Utility Knife that feels comfortable in your hand. Some of the main stream brands that I like are Shun (which I use in this video), Henckles, Wusthof and Mac. Go to a store and hold them in your hand before you decide to buy; it makes all the difference in the world.

Dude you complain about dulling your knife while removing the wishbone the wrong way. Knife up, from the bottom inside on each side first, then knife down on the outside to the bottom on each side second, then chicken shears at the top of the sternum where it connects to the posterior of the collar bone and remove
