Two thumbs up on this flour from Naples, Italy. This is a very fine textured flour milled to create a light and fluffy flour; great to add a bit of strength and crunch to pizza dough especially when you want to make a thin crust, also good for rustic Italian breads, or mixing with other flours to make your own custom blends for a airier texture which is what I do.
Pleasing to the palate with very mild wheat flavors, a mellow yellow color and a pure ingredient which is what I look for; meaning no chemical enrichments, dough conditioners, sugar or enzyme additives, etc. Just straight semolina milled from Durum wheat berries!
