strawberry chocolate mousse
10 oz (283g) dark chocolate
1/2 c (113g) hot water
1/2 c (113g) strawberry purée

using a method invented by Hervé This. pour hot water over chocolate. wait a few minutes for the chocolate to melt. add strawberry purée. whisk over ice bath until just begins to set. top with flaky salt

be careful not to over mix or the texture will be grainy. if you do over mix, place the bowl over a double boiler to melt everything down. then re-whisk over an ice bath.

I’m curious on how that retains shape without gelatin or something similar. I’ve seen mousses made with heavy cream and chocolate but never anything like this. It looks good tho! I might give it a try! Thanks for the recipe!!!
