ORECCHIETTE WITH SAUSAGE AND BROCCOLI | 30 MINUTE PASTA RECIPE

One of the best pasta dishes you will ever make. Orecchiette pasta, translated to "little ears", with sausage and broccoli is a really easy recipe with minimal ingredients that includes pasta, spicy Italian turkey sausage, fresh broccoli and grape tomatoes, sautéed onions and garlic seasoned with chicken broth, lemon juice, lemon zest, fresh basil and red pepper flakes garnished with fresh parmesan cheese. These little pasta shapes is perfect for holding the sauce because of their deep sahep. An easy 30 minute meal any night of the week.
Serves 6
Shopping List:
8 ounces orecchiette pasta (you can sub with small pasta shells)
1/4 cup cooked pasta water
1/8 cup Kosher salt (if using table salt, use 1/2 that much) for the pasta water
1 lb. spicy Italian turkey sausage
2 tbsp. olive oil
1 large onion, diced
3 large cloves garlic, thinly sliced
1/8 tsp red pepper flakes
4 cups chicken broth
2 cups baby broccoli, roughly chopped
2 tbsp. lemon juice
1 tbsp. lemon zest
1/2 cup fresh basil, chopped
1 cup grape tomatoes, halved
1/4 cup finely grated parmesan cheese
Directions:
Add the broth to a pot and bring to a high boil. Add the salt then the pasta and cook about 10-12 minutes until AL Dente, stirring occasionally. Remove 1/4 cup of the water and set aside.
Add the oil to a high sided skillet over medium high heat. Add the sausage, break up and cook about 8-10 minutes until thoroughly browned and cooked through. Remove to a bowl and set aside.
Bring a pot of water to a boil and add the broccoli. Blanch for 2-3 minutes then immediately place into a bowl of ice water to stop the cooking.
To the same skillet over medium heat, add the onion and sauté 5-7 minutes until softened. Add the garlic and red pepper flakes and stir about 45 seconds or just until the garlic is fragrant. Stir in cooked sausage, the blanched broccoli, lemon juice and lemon zest. Reduce heat to keep warm.
Add the cooked orecchiette, the reserved pasta water and the grape tomato halves and chopped basil. Toss.
Garnish with parmesan cheese. Serve immediately.
