Anthony is in one of his favorite cities, Venice. He joins friend and cookbook author Lori De Mori for a seafood and risotto lunch at Trattoria da Romano. Passed down through 5 generations of the same family, Trattoria da Romano is an artist favorite that specializes in good food made with good ingredients in the traditional way. Anthony and co. enjoy cuttlefish roe, sea snails, octopus, and shrimp cooked over a wood-fired grill. The meal is topped off with a truly great, heroic risotto. In Anthony’s words, “perfect!”

As a recovering chef and line cook I think that perfectly prepared risotto is at once the most sublime yet simple yet complex dish to master. When it is prepared and served correctly it becomes the dream and the memory that you chase forever. I never tire of eating it - this looks like the Mona Lisa of risotto. They way that cook "jumps" the risotto 2 or 3 feet in the air is like culinary ballet to me

I have been fortunate enough to have been to Venice twice. I'm not that well travelled, but Venice is without a doubt my favorite city. I am now to an age and financial status where travel to another country may not be feasible, but I have just been made to make a vow to somehow make a trip to Venice one last time, for as long as possible, in the next few years.

I appreciate Bourdain's ability to articulate food experiences in a relatable way. By that i guess i mean he's not pompous. Always enjoyed his shows as a kid

I lived in Veneto for many years..the local version is a peasant one called risi con pisi
Risotto with peas ..
My flat was above a local.resto with a speciality in polenta and fish..guisto cosi

Love how genuine bourdains’ laugh is when the guy refuses to yield any ounce of pride whatsoever …. “eh i’d make the girls stay w/o the cosmos, i’ll keep em here w the shit we got.” having worked in restaurants a long time that really is such a brave and gutsy attitude, it is genuinely amazing and hilarious. Like even peter luger serves espresso martini. everyone compromises a bit to stay alive. it is so awesome to hear a guy really ngaf and put his money where his mouth is.

Risotto is so good if cooked correctly. My father used to say it's like eating freshly poured concrete, because it lays in your stomach!!

Risotto is the dish of death. Paella? Sure. Biriyani? Hmm ok. But a standout risotto still eludes me to this day. Must keep at it 😊

A question on recipe: I have been taught (and always have) saute the onions, shallots, whatever, the throw in and saute the rice (a bit), then deglaze, then comes the broth (this from my Italian ex-wife, restaurants I have worked at, etc.). Here the rice is added into the broth. Also, any onions or whatever in here? And lastly, and most importantly, any cheese??

I'm not entirely sure this is true, but I read people paint their houses different colors so they know which one is theirs when they come home from the pub😅. Might be just England.
