These are just roasted peppers. You could throw mushrooms, shallots, tomatoes etc in there. The moisture content is what you have to look out for. I would probably use partially dehydrated mushrooms by frying them up a little first to get the moisture out. You could use sun dried tomatoes or partially dehydrated ones from a dehydrator, etc. You don't want to end up with soup. Or maybe you do and that is ok.

Looks yummy! I like spicy, so I'd add some chopped up jalapenos.

Pity all that oil being overheated. I would bake and THen drizzle the juice of olives....and let infuse and marinade à froid
