As a mom, pastry chef and tv station worker life can get pretty hectic. In this video I show a glimpse of my daily to dos and my go to recipe for my delicious macarons.

I had to macke about 60 but ended up making about 80 for the birthday party of my friends son. In Austria we have a tradition of bringing something sweet, either cake or cookies or chocolae, to school for everyone to enjoy and to celebrate the birthday together.

here is the macaron recipe:

130g blanched almond powder
130g powdered sugar
- sieve and put aside
100g egg white
90g caster sugar
1 tsp cream of tartar
- beat until mostly stiff peaks
- add food color if you like

*for chocolate macarons I add 2 tbl spoons of cocoa powder and reduce almond powder by the same amount.

-pour sugar-almond mix into whipped eggs and stir until it flows off the spatula like lava.
*you need to get rid of the air, otherwise your macs can get cracks

-let dry for about 2 hours until they are dry to the touch
-put in the oven at around 130 °C for around 15 minutes

** this is a trial and error. every oven is different and it might take you a few macaron sheets to gt it right. you might need a lower temp and bake for longer, you need to try it out and see how your oven bakes.

Buttercrem:

30g egg whites
50g caster sugar
- whip until fairly stiff
85g room temperature butter
-add one spoon at a time and whip for 3-5 minutes until fluffy and white
add some vanilla and keep whipping
1 tsp cream cheese
-add a t the very end and only whip until combined.

*the buttercream will get runny in the beginning. DON´T PANIC - that is completely normal. Keep whipping and it will come together again.
