Not sure if this theory is correct but...

This first time here Borden legitimately didn't know. The twin who did it was so distraught he couldn't talk about it yet and hadn't told him, so he went to pay his respects for them and legitimately didn't know the answer as to which knot had been tied, had to walk away.

The next time this is encountered though is from Angiers perspective reading Bordens diary. We find out at the end that he intended for Angier to read his diary, so everything he wrote in there is suspect. He knows which knot was used at this point but deliberately throws the "I don't know" in there just to mess with Angier who he knows will read it later. This is a super brutal burn considering he stuck it in towards the back in a journal that was coded with a cipher. He made him trodge through all of that just to get mocked.

Before Oppenheimer, I thought this film had Nolan’s best cast. Aside from David Bowie’s flawless performance as Nikola Tesla, it had Hugh Jackman, Christian Bale, Michael Caine, Scarlett Johansson, Rebecca Hall, and Andy Serkis. Oh and Niles from The Nanny 😂
