Still waiting for my scapes (my garden is a bit shadier than I'd like it to be for Garlic), but I make Garlic Pesto from the scapes!

The best thing I ever did with garlic scapes is to turn them into a compound butter. SO GOOD ON POTATOES and everything else too. But especially potatoes.

You can also eat the leaves too. They taste like a combination of garlic and chives.
