Well, for starters Chris developed this recipe to be made without a stand mixer! In the past you've seen me test the Brown Butter Toffee Chocolate Chip Cookie and BA's Best Salty Chocolate Chunk Cookie -- so how does this recipe stack up? Well, it's got a mix of brown butter and melted butter, so the flavor is a little bit nutty and complex. And with a higher proportion of dark brown sugar this cookie packs some serious flavor. Let me take you step-by-step through how to make the best chewy, crispy, and gooey chocolate chip cookie.

INGREDIENTS

1½ cups (200 g to 225g) all-purpose flour
1¼ tsp. (4 g) Diamond Crystal or ¾ tsp. (2 g) Morton kosher salt
¾ tsp. (4 g) baking soda
¾ cup (1½ sticks; 169 g) unsalted butter, divided
1 cup (200 g) (packed) dark brown sugar
¼ cup (50 g) granulated sugar
1 large egg
2 large egg yolks
2 tsp. vanilla extract
6 oz. (170 g) bittersweet chocolate (60%–70% cacao), coarsely chopped, or semisweet chocolate chips

Spot on about the flour. I also added 25 extra grams the next batch and they came out nicer. Chilling your dough will also control the crazy spread. I used >70% dark choc and added flaky salt on top. Gives a nice contrast to the bitter chocolate 🍫.

I absolutely agree, it needed more AP, and also, I would say that if you don't like them that flat, it benefits from refrigeration.

I refrigerated mine overnight and they were thicker. They didn't spread at all with just 200 grams.

I tried this recipe twice. Yes mine spread too much as well. But the flavor was on point. I will try again with more flour. Maybe 30 to 40 grams more.
