Khus Khus Sharbat is a refreshing summer drink made using poppy seeds, milk and assorted dry fruits. This drink is particularly good for summers because of its cooling effect on the body.

* Approx. preparation and cooking time: 10 mins
* Soaking time for almonds - 30 mins
* Refrigeration time - 2 to 3 hours
* Serves - 2-3 persons

* List of ingredients:
1. Poppy seeds (Khus Khus) - 1 tablespoon
2. Almonds - 2 tablespoons
3. Cashews - 2 tablespoons
4. Saffron milk - 1 tablespoon
5. Milk - Half litre (500 ml)
6. Sugar - 1 small cup
7. Custard powder - 1 tablespoon
8. Soaked sabja seeds - 2 tablespoons

* Method of preparation:
1. In a bowl, add 1 tablespoon poppy seeds, 2 tablespoons each almonds and cashews. Add some water and soak for about 30 minutes.
2. Next, drain the water from the soaked dry fruits. Peel the almonds and drop all the ingredients into the mixer jar. Grind well to make a smooth paste.
3. Take a thick bottomed vessel/pan, add half litre milk and turn on the heat to low flame.
4. Then, add the ground paste and stir well.
5. Next, add 1 tablespoon custard powder and stir continuously while ensuring lumps are not formed (alternatively you can mix custard powder in 2 tablespoons water and add).
6. Now, add 1 small cup sugar (can vary as per taste and quantity) and continue stirring until the milk boils and sugar dissolves.
7. Then, turn off the heat and transfer into a large bowl, also add saffron milk and refrigerate for 2 to 3 hours.
8. Once refrigerated, take out the bowl, gently stir and pour into glasses.
9. Garnish with soaked sabja seeds and almond slices.
10. Enjoy tasty, refreshing drink on a hot summer day.
