But wouldnt it be crazy if someone unexpected, like Arya, somehow snuck up on one of them, say, the Night's King, and killed him with some clever trick, like switching the blade hand? Don't tell me that wouldn't be totally unexpected.

The white walkers turning Crasters babies in to others Is probably only happens in the show. Since GRRM describes them as a different form of life. In the books they probably use the babies for blood sacrafice, since they are also strong in sorcery
