Keto Breakfast Veggie Hash With Runny Egg on the Blackstone Griddle

I have faced the crowd and now its time for Hungry Hussey to lose some weight. Life dynamics have changed, and I've keep eating more and more. I must do better.

I made this Keto type recipe with zucchini, squash, bell pepper, and onion. I then topped it off with a runny, over medium egg. It was delicious. I had a few pieces of bacon to round out the breakfast. Very yummy folks!

Ingredients:

1/2 cup zuchinni
1/2 cup yellow squash
1/2 cup bell pepper
1/2 cup of onion
3 eggs (or however many you want)
Salt
Pepper

Cook hash with olive oil until crisp, serve with eggs on top and enjoy!

Im on about 6 weeks of keto... I've been on alot of diets before, that first few weeks was absolutely horrible. But I've lost about 30lbs and im good now. Lol

Love your cooking vids Matt! The only suggestion I can think of is to narrate everything you’re doing as if you’re on the radio and there is no video. This way we get to not only see what you’re doing, but we are also able get into your head and know what you’re thinking as you cook. Does that make sense?

Hey Hussey, That breakfast looked great. It looks like you have different heat zones on that griddle. Would you start showing us how your knobs are set to get the different zones? Keep up the good work.

I have had a 17 inch Blackstone for several months and just bought a new 36 inch Blackstone. My purchase was mostly influenced by watching all your videos. I've been cooking zucchini and yellow squash on the griddles, but tonight thanks to your video, I'm going to add onions and green peppers to the mix. Did you win the weight contest? Thanks for all the videos. I've learned a lot from them.

I am going to try makin an egg in a basket . You take a glass and cookie cut the center of some big bread slice, and put an egg in the hole an fry it. On top of butter of course. Give it a try to make some of them. What cha think?

Take yourself some mushroom, onion, bell pepper, and spinach, and throw it all on there. Let it sizzle and wilt. Throw on some avocado and then put 3 eggs scrambled all over it and just make a hobo hash out of it. Throw a couple slices of ham in the middle and fold it. Got yourself a messy omelette. I used to make one almost every morning. It was a great dieting breakfast that filled me up!
