Simply stated. The water that the hull displaces is heavier than what has displaced it. Therefore, flotation. What matters is that you displace more water weight than the weight of the object you put in the water. Surface tension plays a small role on lighter objects also.

I don’t think the issue was the concept of building boats out of metal, I think the issue was that wood was far more accessible for most of human history. If you google it, you’ll find that the moment wrought iron became more abundant and affordable is the same moment the first all metal ship was built.
