Voskos Bites: Gameday Dips & Sides

Voskos "Kick-off" Guacamole

Ingredients:
½ cup garbanzo beans
1 avocado
¼ cup plain non-fat Voskos Greek Yogurt
4 tbs. lime juice- juice of 2 limes
½ tsp. minced garlic
Salt & pepper to taste
1/8 tsp. ground cumin
1/8 tsp. chili powder
1 tomato, diced
Fresh cilantro chopped
Optional: jarred jalapenos, diced
Directions:
Using a food processor add avocado, garbanzo beans, yogurt, lime juice, garlic, salt, pepper, cumin, chili powder and jalapenos. Blend until combined. Transfer to a serving bowl, stir in the tomatoes and cilantro. Cover and chill for 30 minutes. Serve with tortilla chips or sliced vegetables.

Cucumber-Dill Yogurt Dip
Ingredients:
1 cup plain non-fat Voskos Greek Yogurt
¼ cucumber, diced and seeded
2 tbs. minced fresh dill
1 tsp. ground coriander
¾ tsp. red pepper flakes
½ tsp. white wine vinegar
Salt & pepper to taste
Directions:
In a medium bowl, mix together yogurt, cucumber, dill, coriander, red pepper flakes, vinegar, salt and pepper until evenly combined. Serve with an assortment of vegetables and pita chips for dipping. Cover and chill 30 minutes.

Apple-Walnut Coleslaw
Ingredients:
1 bag shredded green cabbage
1 bag shredded carrots
2 green apples- sliced in ½" slices
½ cup chopped walnuts
1 cup plain non-fat Voskos Greek yogurt
Juice of 1 lime
1 tbs. apple-cider vinegar
Salt and pepper
Directions:
In a medium bowl add the cabbage, carrots, apples and walnuts. Toss to combine. In a small bowl add your Voskos Greek Yogurt, juice of 2 limes, apple-cider vinegar and salt and pepper. Use a whisk to combine the dressing. Pour the dressing over the coleslaw and toss until well combined. Cover and chill for 30 minutes. Serve as a side dish
