Never thought about this before, but no matter how good the actors are, you can always clearly hear and see the difference between the actual movie shots and the behind-the-scenes shots. The voices, laughter - even the facial expressions are much more natural and vibrant when the camera is not rolling. That goofing and laughing at 3:16 - you would never get that in the movie itself even if it was scripted.
