Every Friday is Brunch at the sorority house and this week was a real treat! One of my favorites!

I love your recipe! Corned beef hash is my guilty pleasure if we ever go out for breakfast or brunch, which we never do. Which is why its such a special treat whenever I can have it. It's also generally super high in sodium. Your version looks absolutely delicious & you also control the sodium. Well done.

I like over medium had them this morning. But I’ve never tried flipping it to achieve the same result.

I do this for elk camp...cook the corned beef before hand and just add easy potatoes and dippy eggs...easy to do over a camp fire/stove and everyone loves it

That is a lot of Hash! Probably great to can the leftovers, and way better than you will get from canned goods at the grocery store. I got some Sausage Hash at the store the other day, a great idea, but I think I'll make my own version.
