Finish carpenter here. The reason cab doors arent filled is because the interior panel is supposed to move. That way when the door moves over time the seems wont crack

I feel like building your own built-ins from primed poplar or pine would have been a lot simpler/straightforward. Possibly around the same price too. Fewer annoying holes and cracks to fill and nothing beats a custom vibe!

It's a lot easier to paint each shelf and the cabinet before you put the shelves in the cabinet. You can always do touch ups later if necessary.

My old house doesn’t have closets either, back in the day, ‘closets’ were a piece of furniture. This way they could be moved. I bought an antique broom closet, a rare find, and refinished it, adding shelves inside, it’s now my linen closet.
