ingredients
•½ cup natural peanut butter
•2 tbsp pure maple syrup
•1 tbsp molasses
•1 tsp pure vanilla extract
•¼ tsp salt
•1 cup corn flakes or rice cereal
•6oz dark or semi-sweet chocolate (i use dairy free)
instructions
1. add the peanut butter, maple syrup, molasses, and salt to a small saucepan and mix well. heat over medium-low heat until the mixture is slightly thickened (or you can heat in the microwave if preferred).
2. remove from the heat. crush 1 cup of corn flakes or rice cereal and add to the peanut butter mixture. mix until well combined.
3. add the mixture to an 8x5 loaf pan lined with parchment paper and smooth it out using a separate piece of parchment paper. place in the freezer for several hours to harden.
4. once hardened, remove from the freezer and slice into bars. coat each bar in melted chocolate and sprinkle with sea salt (sea salt optional).
5. place in the fridge until the chocolate is hardened and then enjoy! store in the fridge for up to a week or in the freezer for several months.
