Angelo's Mom Makes Samali - Greek Semolina Yogurt Cake

My mom makes a dessert she ate in Greek movie theaters when she was a kid, samali. It's made of lots of semolina flour, yogurt (2 pounds of it), sugar, and mastic gum - a rare tree resin grown on the island of Chios, Greece. But if you can't find that, you can use 2 tablespoons vanilla extract. And it requires no eggs, butter, or milk (even though the recipe below uses butter)!
