they will eat birds that you shoot out the sky if they land in the water (happened a few times durin the mission where you have to collect heron plumes and shit which really pissed me off couse the spawn rates are way lower durin that mission it seems)

Side note walking up to it and shooting it will trigger an attack and if you shoot it and it runs and you follow closely it turns and charges at you for a kill

Hog tie someone then drop them off right in front of the alligator. The talking and moving around attracts the gator

As a Florida man playing this game..I didn't run when a gator bit me..I curved stomped it and if it made it towards the water, I threw dynamite and follow it in the water.
