I do not eat bacon, but do eat cheese. If you fry provolone cheese in a nonstick frying pan just until brown and crisp, you can crumble it once it's cooled. It tastes smokey and rich like bacon.

Hey Laura I've got a recipe that belongs to my mother in law that I'd LOVE to see you recreate. We call it "potatoe trash". It's a wonderful side dish for any BBQ.

It's chopped red potatoes
Eckrich smoked sausage
white or yellow onions
TAMED jalapeños, the tame ones add an unbelievable flavor.

I fry up my onions and sausage together with some oil and butter, just to give them a little color. I add my diced potatoes to a greased Pyrex dish. After I turn off my onions and sausage I season it well and then add my tame jalapeños and a bit of their juices. I let that cook a bit with the residual heat and add the mixture and all of the oils and jalapeño juice to my potatoes. I season a bit more and cover them with foil and cook until tender. The flavor is so amazing... it can be a side dish, I even serve it on its own sometimes. Maybe you could try it and if you like it you could use your wonderful platform to share it.
