To Make Onion Chutney
Oil - 1 Tbsp
Chana Dal - 1 Tbsp
Urad Dal - 1 Tbsp
Onion - 4 Nos
Ginger
Garlic - 12 Cloves
Byadgi Chilli - 12 Nos
Tamarind
Rock Salt - 1 1/2 Tsp
Jaggery - 1 Tsp
Water
For Tempring
Oil
Urad Dal - 1 Tsp
Mustard Seeds - 1 Tsp
Cumin Seeds - 1 Tsp
Red Chillies
Hing / Asafoetida
Curry Leaves
METHOD:
1. Take oil in a wide pan. Add chana dal and urad dal.
2. Roast the dals until they are slightly brown in colour.
3. At this point, add in the chopped onions and saute for 2-3 mins.
4. Add chopped ginger and garlic cloves to onions and saute for a few more seconds.
5. Add in byadagi chillies and saute for a few seconds and add tamarind bits.
6. Then add rock salt and mix well.
7. Once the onions are transparent and other ingredients are no more raw, turn off the stove and transfer everything to a mixer jar.
8. Add jaggery to the mixer jar and grind once. Then add water and grind everything into a fine paste.
10. Transfer the chutney into bowl and keep it aside.
11. For the tempering, take oil in a tempering pan and heat it.
12. Add urad dal, mustard seeds and cumin seeds.
13. Once the mustard seeds start splattering, add in red chillies and saute.
14. Then add in hing and turn off the stove. Add curry leaves.
15. Transfer this tempering to the onion chutney and mix well.
16. Delicious Onion Chutney is ready to be served with any tiffin of your choice.
