School Lunch Cheese Sticks - Copycat Max Sticks!

This is a homemade version of those school lunch pizza sticks from middle school that I could never seem to forget, or find in stores.

It comes with a cheap, quick, and tasty dipping sauce - just heat and serve, no long simmering needed.

Ingredients:

6 frozen mozzarella sticks (string cheese or cut up low moisture mozzarella)
12 oz pizza dough
2 tbsp grated cheddar (optional)

homemade pizza dough:
1 1/2 cup flour
1/2 cup warm water (~hot tap water temp)
1 tsp sugar
1/2 tsp yeast
1/4 tsp salt
2 tbsp olive oil

dipping sauce:
1 can crush tomatoes (28 oz)
4 cloves garlic, sliced
2 tbsp tomato paste
1 tbsp olive oil
2 tsp onion powder
2 tsp sugar
1/2 tsp salt
1/4 tsp fresh ground black pepper
1/4 tsp red pepper flakes

So I just gave these a shot, and they're pretty good, but they're not quite the school lunch cheese sticks I was hoping for. Although the shape is mostly right, the dough isn't quite soft enough after baking, and the bread is a little too airy to match the dense layers that I remember. I'll definitely be consulting this video again, because the pizza dough recipe is pretty good, and I think I would use it for a pizza or garlic knots, but sadly it wasn't what I was hoping for this time around

If you can't make the dough at home, can you just use already made dough from the store?
