Soy Fried Chicken or Soy Chicken is a Chinese style fried chicken and is popular all over the world. The chicken is marinated and boiled in a mixer of soy sauce and water. This cooked chicken is fried in oil to give you a fried chicken with soy taste.

INGREDIENTS:
3 pieces Chicken leg quarters
salt for seasoning
3 cups water
4 cloves garlic
1 thumb ginger
1 stalk onion leeks
3 pieces star anise
3/4 cup soy sauce
3 tablespoon brown sugar
3 tablespoon vinegar
1 tablespoon whole peppercorns
oil for frying

Directions:

Wash and prepare the chicken leg quarters. Sprinkle some salt and rub on all sides. Let them sit for around 15 minutes.
Pour 3 cups of water in a pot and then add the soy sauce, onion leeks, ginger, whole garlic, peppercorns, star anise, and brown sugar. Mix well. Heat the mixture until boiling.
Submerge the chicken leg quarters into the mixture. Cover the pot and let it simmer for 15 to 20 minutes using low heat. Baste the exposed part of the chicken from time to time to have an even color.
Transfer the cooked chicken quarters to a cooling rack. Air dry for a few minutes until ready to cook.
Heat a lot of oil in a pan. Shallow fry the chicken until golden brown and crispy. Flip to cook the other side. Once all sides are golden brown, transfer the chicken quarters to a strainer or paper towel to drain excess oil.
Transfer the chinese style soy fried chicken to a serving plate. Enjoy this with a lot of steaming rice and with your favorite dipping sauce. Yum!

Back in the 60’s, our Chinese next door neighbors owned a little store and they prepared their fried chicken same as shown in the video. Luckily my Mom were closed to them and they shared most of their Chinese cooking skills and recipes. And, my siblings and I all learned from my Mom, but we’ll only cook Chinese food for family gatherings, other than that we’ll go to our favorite Chinese restaurant.

my mom used to make this thanks for bringing back those memories. Some of you guys have inspired me to start my on channel. i had a stroke a few years back
i wanted to start a homesteading content. we have lots of animals but my left leg isn't to good so have to use a cane left hand doesn't work at all so walking around with a Camra while doing my chores just doesn't work. lol but as i was watching some of you guys cook one day i thought what the heck i can cook and love cooking, canning and have a freeze dryer and love talking. lol i can put the camera on a tripod so I'm gonna do it i made three little videos just fooling round talking cooking shared on face book got great feed back so down loaded to you tube for a start pray for me pleas .

I tried it twice i adjust the seasoning for its too salty until i got the right according to my taste.the thing i like here aside from the taste is the crispiest this is good for those who dont like breading .❤

Simple use kecap manis (sweet soy sauce) it has brown sugar already known brand like kecap Bango or kecap abc
