Makes 24 cookies (12 ice cream sandwiches)
1 cup + 2 tablespoons all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 tablespoons corn starch
1 stick (8 tablespoons) salted butter, room temperature
¼ cup + 2 tablespoons granulated sugar
¼ cup + 2 tablespoons brown sugar
½ teaspoon vanilla extract
1 egg, room temperature
6 ounces semi-sweet chocolate, chopped small
