My Method for the Viral Cottage Cheese Flatbread: Make Them in Bulk as 'Buns'!

I haven't found myself as blown away by the viral cottage cheese flatbread recipe as some people. Even making it as many have recommended, I found that the "bread" would crack when folded and the edges were often over done.

So I set forth to come up with a process that created consistent results and would allow a person to make the recipe in bulk. Thus was born my mini-flatbreads.

Products used in this video:

Recipe:
- Preheat oven to 350F (175C)
- In a food processor, Nutribullet or blender combine 1 cup (285g) full fat cottage cheese and 2 large eggs and process until smooth
- Add seasoning of choice, I recommend 1/2 tsp
- Divide batter between the 6 compartments in you silicone mold (linked above) on a baking sheet
- Bake for 25 minutes, rotating the tray halfway through
- Remove tray from oven and allow to rest for 5 minutes, then flip over each mini flatbread and return to the over for 5 minutes.

Calories: 63
Fat: 3.5g
Total carbs: 1.8g
Protein: 5g

I happen ro have the smaller baking tray, so will line w/parchment, fill w/ all batter, cut when done into squares! Just cant justify buying one more "gadget"! 81 yrs old, getting rid of "stuff"!😂😂

For those who comment that the didn't follow the recipe.. Let's remember that Steve has been testing recipes for a long time and knows what he's doing. If he doesn't get it quite right the first time, he'll find a way to perfect it! So I wouldn't bother adding negative comments 😉... just saying 😇. You Rock, Steve!

I've used these silicone molds with the avocado flat bread recipe, (smash an avocado, egg, half cup of cheese and seasoning of choice), mix well and filled 4 and baked at 350 for 25 min..nice little bread substitute also..

I used parchment paper to make a rectangle (folded and stapled corners) for my cottage cheese bread wrap. It contained the mixture and made a nice sized rectangle wrap without overdone edges.

I watched a girl make them on 1/4 sheet trays from Costco. Her's also had consistency, and she cut across 4 flat breads to each pan. I thought I might try that way till your video today. Hers may work if you want wraps, but I love yours for the sandwich! Thanks for another great video!
