This Almond-Crusted Cod with Orange Sauce is truly spectacular. The crispy almond exterior matched against the flaky tender cod is perfection. The orange sauce puts it over the top. And it comes together in about 30 minutes!

ALMOND-CRUSTED COD WITH ORANGE SAUCE INGREDIENTS:
For the Sauce:
1 tbsp olive oil
1/2 shallot, finely chopped
Zest of 1 orange
1/4 cup orange juice
1/4 cup white wine
2 tbsp white wine vinegar
1/2 tsp salt
1/4 tsp black pepper
2 tbsp unsalted butter
For the Cod:
2 lbs cod fillet, cut into 4 fillets
Salt and pepper
1 cup all-purpose flour
2 eggs (plus 1 tbsp water)
1 cups almonds, pulverized in a food processor
1/4 cup grated Parmesan cheese
1/4 cup Panko bread crumbs
Olive oil, for frying
