Watch Giuliana make this delicious lasagna: no béchamel sauce, no faff. The filling is garlicky sausage, mushroom and ricotta; a combination called "alla Norcina", a speciality of her town Norcia in Umbria - and it's absolutely scrummy.

For the pasta:
150g grano tenero flour + 150g semola flour (or use 300g of grano tenero)
3 large eggs

For the filling
400g good quality, meaty sausages, skins removed and crumbled
1 garlic clove, crushed, if the sausages are not garlic flavoured
400g sliced mushrooms
400g cows milk ricotta
30g approximately of grated parmigiano cheese

I love this recipe, great recipe from the young lady chef who prepared it, and great find Vicky, on locating this fabulous recipe. I like mine with the Italian hot sausage, but my wife prefers the mild, so i just mark it with a knife on the top so we know which one is ours individually. I am able to keep my hot sausage to one side of the pan when frying, and when putting in the casserole dish. It is a win, win for me and my wife, otherwise i would have to use all mild sausage so it would just be a win for her, but i love her, and if momma ain't happy, nobody is going to be happy, lol.

Fantastic! I don't know if I would call it "quick" though hahaha. I think if you add the time required for the ricotta and the pasta, it can add up. Perhaps, though, it's quick by Pasta Grannies standards ;)

I'm surprised at how many lasagnas don't have cheese as the top layer! I guess the crispy pasta is too tasty to cover up.
