Hey guys, hope you enjoy these mini lemon meringue tarts. They are so delish! Great idea to make with kids :-)
Tools you'll need:
Strainer
2 Small bowls
1 small pot
1 muffin tin/pan
Muffin liner/wrappers
Spoon/spatula
Grater
Food Processor
Mixer
Measuring Cups
INGREDIENTS
Crust:
1 1/2 cups of crushed Marie biscuits (use food processor to crush)
3/4 tsp cinnamon
2/4 tsp nutmeg
100g melted butter
Filling:
7 eggs
1/2 cup fresh lemon, squeezed (3 lemons)
1 1/4 cup caster sugar/superfine sugar
1tbsp lemon zest
50g cold butter
Meringue:
4 egg whites
3/4 tsp cream of tartar
1 1/2 tsp vanilla extract
1/2 cup caster sugar/superfine sugar
