Unexplained Changes in Cartoons:

Shaggy was a Vegetarian as his Voice Actor Casey Kasem was a Vegan. When Casey passed away and Shaggy was voiced by Matthew Lillard his Character started eating Meat products, but there was no in universe reason why he quit being a vegetarian.

In the Original Transformers G1 Episodes More than Meets the Eye, the G1 Autobots had the Ability to fly like Superman in their Robot Mode, this ability was randomly taken away with no in universe explanation, and the Autobots just stoped flying and made no mention of being able to fly in the past.

In Batman the Animated Series and throughout the DC Animated Universe, Batman characters go through multiple design changes and costume changes without any in universe explanation. As far as the story is concerned they are all interpreted to be the same design and character as if they never changed.

And lastly while this is an Anime and not a Cartoon: in Dragon Ball Super, Present and Future Trunks have different hair colors from purple to blue with no In-Universe Explanation. We have out of universe production reasons, but as far as the story is concerned there is no explanation. This is also different from Future Trunks in DBZ vs Super.

Shaggys metabolism is so fast he can eat several dozens of pounds of food. He most definitely needs meat for the protein so his body could keep up in function

The thing with trunks is also a thing with bulma, her hair used to be purple but changed to blue after a while. We could probably just chalk it up to Toriyama forgetting so that's probably why they never explain the hair color change

I reccomend the channel:Rodimus Primal. It's a great channel which awnsers some questions from G1. The Short Awnser for the autobots flying is that they have jetpacks and any scene where they don't is likely an animation error which was either from the original episode or something gotten from the modern remasters which uses the filmstrips (if i remember correctly) that were first animated and then fixed shortly before broadcast.

Batman: the animated series change their designs in season four because they want to be closer to Superman the animated series.

In the original scooby doo, where they vist the castle at Skull Island, shaggy had a bologna sandwich and he ate pizza with pepperonis on it

I think I can explain the trunks situation remember both trunks are from two different timelines so maybe the hair difference is because of the different timelines

Shaggy wasn't a vegetarian at the start. He was later made one after Casey threatened to stop voicing him after seeing Shaggy and Scooby used in Burger King commercials to sell Whoppers. So he was made a vegetarian out of nowhere first before the change being reverted after Casey's passing.

The reasons why future trunks hair is blue is because bulma in the dragon ball manga have purple hair but the animw choose the limited color scheme of bulma hair so future trunks hair is blue to match bulma hair

Future Trunks probably didn’t want the purple hair and changed it to blue by using dye or something

Actually i remembered another one from G1, in series with Optimus clone there was a scene where both clone and Optimus were scanned and there was no matrix chamber in his chest, but in "Transformers the movie" Optimus had it

Batman's design change had to do with toy design and copyright. Turns out you can't copyright a bat no mater how stylized so they added that yellow oval shape. The cape draped over the shoulders in such a way that made action figure articulation difficult which is why they had to move the cape out of the way of the shoulder joints.
