Small Loaf Gingerbread Cake - So Easy And Soooo Good

Perfect for the holidays or any time of the year! It's a small batch recipe that delivers a perfectly spiced small gingerbread cake. So easy to make and the perfect amount to serve one or two people.
🔴 INGREDIENTS
2 tablespoons granulated sugar
2 tablespoons salted butter , softened
1 large egg yolk
¼ cup molasses
⅔ cup all purpose flour
¼ teaspoon baking soda
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅛ teaspoon ground cloves
⅛ teaspoon salt
¼ cup hot water
🔴 INSTRUCTIONS
1) Heat oven to 350 degrees F (175 degrees C). Grease a 5-inch baking dish or dish of similar size.
2) In a medium-sized bowl, cream together the sugar and butter. Beat in the egg yolk, and mix in the molasses.
3) In a small bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Pour into the sugar/butter mixture and mix well.
4) Stir in the hot water.
5) Pour into the prepared pan.
6) Bake for 30 minutes, until a knife inserted in the center comes out clean.
7) Allow to cool in pan before slicing.

A) Choosing the right baking pan: The success of this gingerbread cake recipe depends on the size of the baking dish you use. I use a 5-inch dish that measures 5-inches x 5-inches and is 1 ¾-inches deep. For best results, use a dish of similar size. A 6.5-inch x 4.9-inch dish or two 8-ounce ramekins would work well with this recipe too.
B) Use softened butter: You want to use softened butter in this mini gingerbread cake recipe because you want to cream the butter and the sugar together to create air pockets. These air pockets are what help make this cake light. Softened butter should still be cool to the touch but when you press your finger into the butter, your finger will leave an indentation.
C) Mix the batter properly: Be careful not to overmix the batter. Overmixing will lead to a dense cake, so only mix until the streaks of flour disappear.
D) Serve alone or with accompaniments: Gingerbread cake is moist and extremely flavorful and is perfect served as-is, especially with a cup of coffee or tea. It also pairs well with a layer of buttercream, like the one we use in our vanilla cupcakes recipe (just double the frosting recipe if you use it for this gingerbread cake), or cream cheese frosting. It's also delicious with a slight dusting of powdered sugar or a drizzle of caramel sauce.
