Hydrangea | 1000 Cut Tofu🌸🔪

Knife skills are essential for any chef, Chinese and asian chefs in particular are masters with a knife and show “Dao Yi: The Art Of The Knife”, this tofu is a perfect example of that💯

I remember seeing this tofu for the first time on a Chinese cooking show for a recipe called Hydrangea Tofu Soup✨

In the recipe, silken tofu is meticulously cut numerous times into a grid pattern and and then served with a slow cooked chicken soup usually seasoned with red dates, goji berries and other herbal and luxorious ingredients👏🏼

It’s called Hydrangea Tofu because of its resemblance to the flower when it opens up suspended in liquid. It’s also called 1000 Cut Tofu to refer to the numerous slices needed to create the thin strands👀

I also know it’s sometimes called Chrysanthemum Tofu too🌼

Something I love the most about this dish is
That it’s a great example of how skill and creativity can play into food. Tofu is a cheap Asian staple and through skill; turning it into a elegant dish fit for royalty 👑

I’m just showing the technique and the final tofu but you can honestly serve this with any clear broth or soup such as pho broth or a consomme🥣

Keys Tips
🔺Wet your knife before cutting to prevent the tofu from sticking
🔺Use silken tofu
🔺You can roll up some wet paper towels or use a pair of chopsticks as a guard at the base of the tofu to get a consistent cut and to prevent your knife from going too deep

it is okay to boil the tofu directly in hot water or just sip the hot water into the tofu inside the bowl?

Did you cut too much off the top? The petals looked a bit short and didn't dance as much after being submerged. Hopefully next time it will be mesmerizing.
