Good evening YouTube friends!
Got another delicious aquafaba recipe to share with you. Luscious and light chocolate mousse. Healthy and easy - no added sugar, super low calorie and chock full of decadent flavor.
You need-
1/2 of the juice from a can of chickpeas
1/8 teaspoon cream of tartar
1/8 teaspoon swerve see calorie sweetener
1 teaspoon vanilla extract

1/2 cup dark chocolate
2 tablespoons PB2 peanut butter
2 tablespoons unsweetened soy milk

Pour your aquafaba into a stand mixer- mix on medium/high until frothy
Add cream of tarter
Mix again until it starts to become pillowy
Add in the swerve sweetener
And then vanilla after a few more seconds of mixing
Keep mixing while you melt your chocolate

Mix pb2 with soy milk and add to chocolate that’s been melted and cooled for just a couple minutes
Mix in 1/3 of your aquafaba mixture to loosen up the chocolate adding in 2 segments
Then slowly fold into the rest of your aquafaba
Pour into glass containers and chill for at least a half hour and up to 2 days.
Garnish with peanut butter cups if you’d like!

This mousse looks lush, chocolate and peanut butter is the ultimate combo!! You could also add silken tofu if you wanted it to be more dense 🌱
