I wholeheartedly agree. When I began cooking we cleaned our hands always. Gloves give a false sense of "cleanliness."

The idea of the gloves is fine.

The *_flaw_* however is that human beings are ingenious at finding ways and excuses to cut corners, and the gloves mean you'll never truly know.

I'm just a home cook but that's precisely why I'm intimately aware of what shortcuts I take as long as I'm not feeding my food to anyone else.

And that's when I'm feeding *_myself._*

I hate to imagine what'd happen if a cook gets annoyed with the fuss and lack of appreciation from customers he has no personal reason to ever care about, especially if they have no pride in their work.

I'm not referring to Massimo's business at all, just F&B in general, especially those in which no one's there for the joy of cooking, and just there for a paycheck they probably aren't satisfied with.

People using gloves get lazy, and that's when mistakes happen.

Kitchens and restaurants don’t provide enough gloves nor let employees change gloves at the frequency necessary to make it sanitary. In order for it to be beneficial you got to be changing your gloves like every 2 minutes. Also your hands get sweaty and covered in bacteria that is naturally present on your skin while wearing gloves so you have to wash your hands just as much.

Most kitchens wear gloves for like cutting meat and sea food because your hands get cold and slimy and it’s hard to wash the residual off. So they wear gloves to cut down on scrubbing time.

Also kitchens don’t wear surgical level gloves which is nessary for the practice to be beneficial.

No restaurant is spending money on thousands of pairs of surgical gloves.
