We had a spur-of-the-moment, almost entirely unplanned day in Epcot back in 2018 when we decided to stick around for a day following a cruise. I don't remember the exact date but it was on a Monday in summer. Despite the lack of planning we had a terrific time, riding Spaceship Earth and Living with the Land and a couple other rides with ever having to wait too long, lunch at Biergarten without any ADR's, exploring all the other national pavillions, it was so much fun and in a way careful advance planning probably would have made the day *less* fun.

On the dining tip, i can't emphasize it enough. My wife and i were able to get ohana dinner the day we were there for right after the fireworks (this was on MLK weekend), so don't give up for even the most popular places
