That looks amazing. I just bought the Marion Grasby paste so I'll try her paste with your recipe. I get what you're saying about Maesri pastes though..I tried the yellow one recently and couldn't believe how close my curry tasted to a thai restaurant's. I will compare the maesri paste to Marion's. Thanks!

What is a good side dish to go with this? Also is there a reason for simmering the beef at the start, not with all the ingredients together?
