3 reasons

1) Wrong meat. Breast has a lower fat content than thigh. When thigh cooks for a long time, the collagen and fat in the thigh breaks down and melts into the sauces, making it taste better and have a smoother texture.

2) Wrong wine. Chinese cooking wine and sake have different tastes. While some brands of sake can be used in replacing chinese cooking wine, sake flavor is as varied as beer.

3) Maple syrup instead of rock sugar. Maple syrup has a different taste to rock sugar and the woody taste of cardboard can be attributed to the maple. Also, based off of the heat and the visuals, it is possible some of it burned in the pan.

The different wine makes a pretty big difference. Chinese cooking wine has a stronger taste than sake. The rock sugar also creates a thicker coating and isn’t pungent like maple syrup. And thai basil obviously tastes different.
At least he knew he was the problem tho lol.

Read a comment saying the channel is all about swaping stuff you normally won't have. Here is the actual replacement
1. Just use chicken thigh is not like the supermarket doesn't have it.
2. The xiao xing wine whilst your grocery might not have it and you don't want to go to asian grocer use japanese cooking wine which supermarkets usually have.
3. If you don't have rock sugar just use regular sugar but less like hlaf as rock sugar is less sweet.

Im convinced he is freezing and thawing out the chicken multiple times, maybe even using a microwave to thaw it out. Aint no way he bought it like that. 😂

Bro you need to actually use sugar. The sauce needs to thicken and caramelize. Your maple syurp effed it up because it added more moisture. You didn't reduce heat or put a lid on it
