When he positioned Steve's hands, he placed the cross. Now when he says "choose right or left", it is just another misdirection. If Steve chose "right", he was gonna say "okay, drop your right hand", if he chose left, he was gonna say, "okay, hold up your left hand, you can put down the righthand away".... Either way he knows he placed the cross in the left hand...

There is a stamp on his ring. When he grabbed his hands at the beginning he placed the x on his left hand. If he chose right he would have simply told him to do the same thing. "Take away ur right hand".

At 3:39 you can just barely see for a frame a small sharp object falling into the pitcher when you playback the video at 0.25 speed. This is most likely a small piece of porcelain that he kept in between his index and ring finger on his right hand as you can see him keeping those two fingers squeezed together for the majority of the scene until after the trick was performed.
