one thing here not considered is the sanitation safety of the designs. The Astra and UFO lames look like they are small bio-hazzards by design but perhaps they are easy to disassemble completely for sanitizing?

It would be helpful if you covered razor change (safety wise) and "holster" or whatever way razors are covered when not in use.

I think your results will be better if you score at a 45 degree angle. I found most lame to be too short as I like to score deeply. I use a scalpel with disposable blades.

Hey Grant! Just sub and have enjoyed your videos so far. May I know if the turn knob on your favourite baker of seville lame, get in the way /snags on your dough? Bread baking noob ie. me, always have scoring problems. Either dough snags or the cut is not deep enough. Thank you.

Hi Grant, I'm sorry but I've tried the top 2 you recommend and totally disagree with you. It almost takes a shop vise to open the wire monkey up (there's no place to grip it); and the Baker of Seville has a frame on the backside that's only 1/4" away from the blade edge, so the frame ends up dragging and marring the dough surface when you try to cut more deeply than that. I actually think the free cheap one you pan is better than either of these 2.

I wish this showed you using the lames… beginning bakers have no clue this didn’t really help at all hate to say it!
