Toph can actually tell that iroh wasn't lying and was genuine about everything. She knows he never sees her as helpless and treated her like anyone else.

Iroh is everyone's uncle. Just saying. The fact that he never had any issues with the Gaang even when Zuko was the enemy... just... he's such an amazing person.

This scene is so amazing because you’d never expect it to happen. Two people on opposite sides and they don’t even know who each other is because Toph just joined the gaang then Iroh gives her advice and she takes it in and decides to go back and not only that she gives him advice too. top 10 scenes for sure

Her expression shows so much when Zuko yells at the gang, my head cannon is she didn't notice it was Iroh until that moment. I mean, they're all tired and in the middle of a fight so I wouldn't assume that she instantly knew that old dude was Iroh until she actually listened. Which is why I love they way the camera pans up from her feet, her entire realization that the nephew of the old man she met is actually Zuko. I really want to know what she's thinking in that moment

Probably the reason she's the most open to Zuko when he tries to join the Gaang, she knows him through Iroh's eyes too.

This truly was a wonderful scene I only wish that they had more screen time together they were both very wise souls that would’ve made a heck of a team on the battlefield. I also like that even after finding out that he was Zuko‘s uncle, Toph didn’t quickly judge him.

What I love about Toph as a character is that because of her interaction with Iroh, she learns that it's okay to need and ask for help after spending an entire childhood being coddled by people who only thought of her as weak and helpless. Her friends never treated her like her parents did. They respected Toph and treated her as an equal while still remembering that she's blind and needs extra help and accommodations at times. Iroh taught her that asking for help isn’t a sign of weakness- which is a lesson she needed to unlearn due to her restrictive upbringing- and being capable of taking care of oneself doesn’t mean she doesn’t have limitations.
Toph is blind, and by definition, a disabled character. Her extremely limited sight leaves her vulnerable depending on her environment and where her opponents are striking from. She’s also a 12-year-old girl with extremely limited life experience and definitely isn’t immune to poor decision making. At the same time, we, the audience, are constantly reminded that Toph Beifong is the world’s greatest earthbender, is capable of “seeing” using her feet, single-handedly invented metalbending, and trained the Avatar as an earthbending master. These facts about her all exist without contradiction, making her an interesting and complex character.
She accepts that there are times when she needs help from her friends, and they willingly and quickly help her without question, without demeaning or belittling her, and while respecting her for who she is. This kind of interpersonal relationship Toph develops with her friends (most notably, Sokka, as he’s usually the one to point where she needs to shoot or pull her away from danger and hold her hand through tough situations) gives power and autonomy to her while also not giving her unrealistic expectations for complete independence as a fighter.
I notice these things in the little details throughout the show: During the episode where Aang wakes up from his coma on a stolen fire nation ship, The Duke is directly behind Toph, physically directing her to where she should point her attacks on the other ship. Or when she’s recovering from burns on her feet, and Aang, Katara, and Sokka are quick and coordinated in lifting and carrying her out of danger. Or in the series finale, when Sokka grabs her hand and pulls her out of immediate danger while stopping the fire nation air fleet.
In each example, those touches are welcomed out of necessity and teamwork. Toph accepts and allows this kind of help to ensure her safety, and she’s reminded that her friends don’t think any less of her just because she needs to reach out from time to time. When I see these little moments, I think back to that scene where she’s having tea with Iroh. She truly listened to his advice that it’s okay to seek help, even if you feel you have to prove your strength to others. And seeking help from those around you can, in fact, make you a better and stronger person as a result.

I have always loved the headcanon that Iroh was kind-of testing Toph at the very beginning when he gave her the cup of tea to see if she was different from other blind people. He was testing if she would grab it on her own, or if he would have to give it to her. And by Toph grabbing the cup herself, Iroh found out that Toph was different, and that that chuckle that he has after Toph grabs the tea was Iroh just having a little joke to himself with the realization of the answer of his test.
