the small air pocket didnt just expand... together with the expansion is an increase in gaseous molecules from the evaporation of water due to lowered vapour pressure... resulting in more gas formed in the water balloon!

The water could've also partially evaporated due to the low pressure
Extreme cases of this have effects on the human body in low pressure environments
It's called the Armstrong effect I believe

5 grams of sodium metal and an open plastic/metal container of water filled to the top. Place them close enough to each other so that in a vacuum the sodium will react with the water. I think it would be interesting.
