Creamy Cucumber Salad 🥒

Sometimes you need to eat an entire cucumber🥒 CREAMY CUCUMBER SALAD. I have been dying laughing over @logansfewd viral cucumber vids and had to reshare this! If you haven’t watched yet, you’re welcome.

There are a lot of ways to eat your veggies, so let’s make it delicious. Add radishes and instead of mayo for the dressing, I use Greek yogurt, which is light and tangy and adds extra protein. This salad is crunchy and refreshing.

YOU’LL NEED
-2 English cucumbers or 8 mini cucumbers, thinly sliced
-1 bunch radishes, thinly sliced
-1 ½ tsp kosher salt
-¾ cup plain Greek yogurt
-2 teaspoons white vinegar
-1 tsp honey
-1 clove garlic, minced (about 1 teaspoon)
-½ tsp black pepper
-3 T chopped dill
-3 T chopped chives

Salt the cucumbers and radishes and let sit to release water. Mix up the dressing. Stir everything together and DEVOUR!
